Menu Creation
We do not approach menus as fixed offerings or collections of dishes. Instead, each one is designed specifically for the moment it is meant to serve—shaped by the environment, the atmosphere, the people attending, and the intention behind the gathering itself.

The result is a menu that feels immersive, personal, and connected to the moment it belongs to. Not simply a series of dishes, but a carefully structured narrative told through flavor, atmosphere, and progression.

Project Menus

Menus we designed for past events, shown as examples of our work. Every menu is created from scratch for its table.

Fossilized
04
This is a dining concept inspired by bones, fossils, archaeology, and the act of discovery.
Unearthed, not served—this menu is a journey through time, inspired by the rituals of excavation and the stories held within bone and earth. Each course is designed as a discovery, where guests become participants in the act of revealing what lies beneath the surface. Bones take center stage—not as remnants, but as vessels of depth and flavor. Roasted, carved, infused, and transformed, they carry richness, history, and an elemental connection to nourishment. Broths simmer with quiet intensity, marrow is presented as both texture and treasure, and structures echo the forms of what once was. Plates arrive layered, concealed, or partially buried—inviting interaction. Crack, brush, lift, and uncover: each movement reveals a new element, a hidden component, a shift in flavor or texture. Tools may resemble those of the dig—delicate picks, brushes, and sculptural flatware—blurring the line between dining and discovery. This is a menu that plays with time, memory, and transformation. A tactile, immersive experience where every course feels unearthed, every flavor carries a past, and every guest leaves having uncovered something entirely their own.
Smoke & Mirrors
01
A menu of illusions: courses arrive under smoke, behind glass and in disguise.
An exercise in illusion—where what you see, smell, and taste are never quite what they seem. This menu draws from the language of smoke and mirrors: deep, smoldering flavors that unfold slowly, paired with sharp, reflective contrasts that cut through with precision and clarity. Smoke moves through each course in layered forms—char, ash, ember, and vapor—bringing richness, depth, and a sense of quiet intensity. But just as the palate settles, brightness flashes through: acid, crunch, and cold elements that reflect and refract those heavier notes, creating tension and release. The presentation is part of the deception. Reflective surfaces, polished metals, and mirrored elements distort perception—doubling, hiding, and revealing dishes in unexpected ways. Plates catch light, ingredients blur at the edges, and each course feels both grounded and untouchable. This is a menu built on contrast and curiosity. Bold yet precise, dark yet luminous—a sensory illusion where every bite invites you to question what is real, and what is simply a reflection.
Sally's Seashells
03
A menu that walks the shoreline, with shells as vessels and the sea in every course.
Carried by salt air and shaped by the tide, this menu is an ode to the sea in all its forms—wild, briny, and alive. Designed to be enjoyed with sand beneath your feet or the gentle sway of open water, each dish captures the essence of the ocean through pristine ingredients and fluid, expressive technique. Seafood arrives barely touched—crudo kissed with citrus, shells opened to reveal their quiet sweetness, broths that echo the depth of the tide. Smoke, salt, and acidity move through the menu like currents, balancing freshness with intensity. Plates mirror the shoreline—ceramics textured like coral and stone, shells repurposed as vessels, flatware minimal and elemental, inviting touch as much as taste. Every detail is intentional, yet effortless—meant to feel as natural as the horizon. This is dining unanchored: vibrant, tactile, and ever-changing. A moment suspended between land and sea, where each course drifts in, leaves an impression, and disappears like a wave.
True Religion
02
This menu was inspired by many aspects of Christianity, and was designed to celebrate the religion and bring you back to the meals that Jesus and his disciples might have eaten.
Rooted in ritual, reimagined through fire and imagination—this menu draws inspiration from sacred meals, ancient symbols, and the universal language of nourishment. Each dish is a modern interpretation of traditions that have shaped cultures and beliefs, transformed with playful technique and bold, unexpected flavor. From the communion of bread and wine to offerings of spice, smoke, and sweetness, every course invites curiosity—blurring the line between reverence and indulgence. Textures surprise, flavors unfold in layers, and familiar elements appear in entirely new forms. This is not a retelling, but a reinterpretation. A celebration of meaning, memory, and the joy of gathering—where the spiritual becomes sensory, and dining becomes an experience of discovery.
